El Taller Editorial publishers, along with Colombia’s Culture Ministry, wanted to create a book to reflect different national investigations about traditional local food. This book series, apart from containing well-known Colombian recipes, is also a compendium of less-known and obscure recipes, thus saving them from being forgotten and giving them their place amongst Intangible Cultural Heritage.
The series was published simultaneously as a collection of eight black-and-white paperbacks and eight “deluxe” hardcover full-color books. Beside the investigative work represented in the recipes, texts and definitions, photographs and illustrations were made for the books. Susana Eslava was the illustrator.
